Directions

Step 1
Add beer to a medium sauce pan, reduce over low heat to half the volume.

Step 2
Season the sirloin with steak seasoning.Grill until cooked to medium. Cut into large dice. Reserve 12 pieces of steak for garnish.

Step 3
Add remaining steak, beer, and 1 cup tomatoes to cheese sauce. Cook until warm stirring occasionally.

Step 4
For each build: Transfer 1 1/4 cup cheese sauce mixture to serving bowl. Top with one tablespoon tomatoes, 2 tablespoons carmelized onions and a sprinkle of blue cheese crumbles. Top with 3 pieces of steak. Serve with 10 grilled ciabatta crostini.
