Directions

  1. Step 1

    To make MEATLOAF: Preheat oven to 375°F.

  2. Step 2

    In a large bowl, combine ground beef chuck and pork, eggs, onion, 7 cups RO*TEL®, bread crumbs, garlic, salt and pepper. Mix well to combine.

  3. Step 3

    Grease 3, 9x5-inch loaf pans and fill each evenly with meatloaf mixture.

  4. Step 4

    Bake until an internal temperature of 165°F is reached, about 70 minutes. Remove from oven and let rest.

  5. Step 5

    Slice each meatloaf into 8, 1-inch slices and keep warm.

  6. Step 6

    To make RO*TEL KETCHUP: In a large bowl, combine remaining 3 cups drained RO*TEL® and ketchup. Mix well to combine and keep cool for service.

  7. Step 7

    To make ONE SERVING, layer the following ingredients: 1 slice bread (bottom), 1 slice cheese, 1 slice meatloaf, 2 ounces of ketchup and 1 slice of bread (top). Place sandwich on panini press to toast and serve immediately.
