Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained

Red wine
1/4 cup
Yellow onion, peeled, minced
1/2 tsp
Garlic cloves, peeled, minced

Dark brown sugar
1 tbsp
Worcestershire sauce
1/2 tsp
Hot sauce
1 cup
Rice, long-grain

Directions

  1. Step 1

    Preheat oven to 350°F.
    In a large mixing bowl, mix ground beef and ground sausage. Add bread crumbs and egg; mix well. Shape into mini meatballs, about ½ oz. each by weight. Place into a lightly oiled hotel pan. Bake for 15 minutes and pour off any excess fat.

  2. Step 2

    To the hotel pan, add the Ro*Tel Diced Tomatoes & Green Chilies, red wine, onion, garlic, brown sugar, Worcestershire sauce and hot sauce. Cover with aluminum foil and bake for an additional 15 minutes until an internal temperature of 165°F is reached.

  3. Step 3

    For Rice
    Cook long grain rice according to package instructions with the addition of turmeric to impart a golden color.

  4. Step 4

    Serving Suggestion
    Place approximately 2-4 tablespoons of rice in the bottom of a martini glass; place 3 meatballs with sauce over the rice.
