Directions

Step 1
Place the hot chocolate powder and heavy cream in medium sauce pot and heat over low heat, whisking frequently until the powder is fully dissolved. Let the mixture cool completely.

Step 2
Pour the cooled chocolate-cream mixture into an iSi (or similar) dispenser and load with 2 CO2 canisters.

Step 3
Divide the mousse into 8 small serving containers, filling each only about ? of the way up.

Step 4
Add an even layer of crumbled cookies to each parfait.

Step 5
Fill each container the rest of the way with more chocolate mousse and sprinkle the chocolate crisp-pearls on top.

Finish with a dollop of whipped cream before serving.
