Shallots, sliced 1/2 cup
Red wine, dry-Pinot Noir 2 cups
Cremini mushrooms, sliced 2 cups

Preparation:

  1. Place a medium-size saucepan over a medium flame.
  2. Add olive oil and shallots. Sweat until tender.
  3. Add wine and reduce by 50%.
  4. Add mushrooms and cook for 2 minutes.
  5. Add marinara sauce and bring to a boil.
  6. Reduce heat, and cook for 10 minutes.
